Espetada is older than the restaurants that serve it. Beef is rubbed with salt and garlic, threaded onto a stick cut from a laurel tree with bay leaves between the pieces, and held over fire. Viola does it in the open, where the tables can watch it cook.

The menu runs to beef or chicken on the skewer, a few other grilled plates, and two desserts worth leaving room for: a banana set alight and a cheesecake under passion fruit. It is a room rather than a terrace, the portions assume you came hungry, and the poncha is good enough to order before you have sat down.
